Ship design in GURPS Vehicles/Spaceships is, I think, extensible to your stated desires. I haven't been following you before this, so forgive me if I'm saying something you've already considered and rejected.
The basic process is to lay out the ship in terms of volumes, hull construction for each, and purposes/systems for each. Spreadsheets are useful for keeping track of stuff during the building process, but at the end, you can summarize anything down into game-relevant details. During play, there's no math requirement beyond addition, multiplication and random numbers from dice.
If you haven't looked at GURPS before, Tech Level 7 is roughly the 1960s-1970s on our Earth, and Tech Level 12 approximates reality-transcendent technology. It is common to mix and match tech levels both for a single culture and between cultures.
